Here’s a sampling of vegetables that are easy to make. Only fresh veggies are described here; for frozen ones, just follow the directions on the package.
Corn on the cob | Peel almost all of the husk off, leaving enough to cover the kernels. Microwave on high for 3 minutes. Remove the remaining husk and eat. |
Zucchini/Courgettes | Cut ends off. Cut in halves the long way. Place on a baking sheet or pizza pan; add salt, pepper, and butter to taste. Broil until they starts to toast. |
Broiled tomatoes | Slice in half perpendicular to the stem (the cross-section should be starlike). Place on a baking tray or pizza pan, and salt and pepper. Broil until they start to char just a bit. |
Broccoli | Cut the head of broccoli into stalks. You can peel off some of the tougher skin at the base of each stalk if you wish. Microwave, steam, or boil. |
Cauliflower | Cut a cone out of the bottom so the leaves can be removed. Break the head of cauliflower into pieces. Microwave, steam, or boil. |
Mushrooms | Slice or chop. Place in a saucepan with salt (pepper and butter optional) and sauté on medium heat until done. |
