Makes four or five servings.
- Start with one or two pounds of potatoes. If russets, you can scrub or peel them as you wish.
- Cut potatoes into 1/2″ cubes.
- Put the cubed potatoes in a pot of water, and turn the stove to high (10).
- When the potatoes come to a boil, turn the stove to medium (6) and boil them for 6 minutes.
- While the potatoes boil, dice bacon/sausage, onions, broccoli, and whatever other ingredients you plan to add. Put them in a frying pan, adding oil as needed.
- When the potatoes are done boiling, drain the water from the pot and add the potatoes to the pan.
- Fry everything in the pan until done.
Note: If you want to make the kitchen smell a bit less oniony, put the diced onion in a bowl, cover with water, and microwave for three minutes. This will also save time when you’re frying everything together.
