Breakfast potatoes

Makes four or five servings.

  1. Start with one or two pounds of potatoes. If russets, you can scrub or peel them as you wish.
  2. Cut potatoes into 1/2″ cubes.
  3. Put the cubed potatoes in a pot of water, and turn the stove to high (10).
  4. When the potatoes come to a boil, turn the stove to medium (6) and boil them for 6 minutes.
  5. While the potatoes boil, dice bacon/sausage, onions, broccoli, and whatever other ingredients you plan to add. Put them in a frying pan, adding oil as needed.
  6. When the potatoes are done boiling, drain the water from the pot and add the potatoes to the pan.
  7. Fry everything in the pan until done.

Note: If you want to make the kitchen smell a bit less oniony, put the diced onion in a bowl, cover with water, and microwave for three minutes. This will also save time when you’re frying everything together.
